If it tastes like rubber bands or erasers it's over cooked. Good calamari when deep fried properly is very similar to deep fried clams. Which are also over cooked if you have to work them like bubble gum to chew them. :P

Tofu can be nice depending on the dish, but it has to be used right.

e.g. with meat it's "ginger steak with mushrooms and vegetables" or such. With tofu it's more like "mushrooms and vegetables with ginger sauce and tofu." It's a source of protein, but not a meat substitute; if the other flavors and textures can't carry the meal, the tofu is not going to help.

IMO failed attempts to replace meat are behind 90% of the bad reputation of vegetarian cooking. You can't replace meat; nothing vegetarian has the same qualities. OTOH a good vegetarian dish can stand on its own without meat flavors/textures.

Honestly, I think tofu gets its bad reputation from crappy 90s stand-up comedians cashing in on macho, "Ew! Health food?! Real men eat BEEF!" bullshit.
