I believe that y'all have realized that I don't cook much these days. (no, I don't.) however, every once in a while I try something. recipes that require lots of fiddling around aren't repeated. however, one of the pool ladies gave me this one and it's a marvel. simple, easy to do and a good result. it keeps well and stands up to all sorts of alterations. eg I realized that i'd made it with 2x the amount of mozzarella that was called for and it was just fine. I've added tomatoes and, next time out, will also add mushrooms.
2 cups cottage cheese
1 pkg frozen spinach, thawed and drained (I chop up fresh spinach.)
1 cup shredded mozzarella
1/3 cup grated parmesan
4 beaten eggs
1tsp italian seasoning (I didn't have any so mixed basil, oregano, garlic powder and ground black pepper)
mix and pour into a greased 8"X" pan or a 9" pie plate (please think again if you think that I measured the pans I've used. however, greasing (or oiling) is very important. guess how I know that.)
bake at 350deg F for 40 min
