Pauls mom used to make this mashed potato casserole with leftover lunch meat and cheese

today I made it into breakfast

take an oiled casserole dish and line it with seasoned mashed potatoes or home fries. Add fresh chopped peppers, onions, tomatoes, bacon (or lunch meat). Take 2-3 eggs and whip them ... pour over. Top with favorite cheese and bake at 350 until happily done
