SMOKED TOMATOES - start with one heirloom tomato per person. Use a melon ball tool to get out the innards (use those for an tomato cuke salad). take about 1/2 pound of ground whatever (or a mix) per person with chopped garlic, onion, a little tomato, green pepper. Cook the meat element and drain thoroughly. Chop the flavor element, add that in and begin sautee.Add some bbq sauce and let it reduce until you get some crunchy bits. Cool.

In the mean while sprinkle the inside of the tomatoes with salt and sugar. Turn them over on paper towels and let them drain off.

Stuff the tomatoes firmly and put in the refrigerator.

Start your smoker. once you have wood going (I used apple and cherry), put the tomatoes in a grilling basket with the exterior rubbed in whatever oil you wish. Smoke until the tomato begins to wrinkle. Transfer to your broiler and add aged Gruyere until bubbly. WOW
